Can you confirm that when a member deletes a photo or an album that the photo is deleted from the server and that the database is updated.

Yes, deleting an album and photo, deletes them from server and database as well.

I asked this question because on one of our sites, we have an Advanced Albums module on V5 which works very well but on V6 the photos are not deleted.
Our addon provider tells us that this is normal and that a change is possible if we order customization.
This seemed very curious to us.

It seems you have a 3rd party product. So, either you have to ask the developer to make their plugin compatible with latest SE to provide requested functionality or you can choose to opt the custom work as well.
